Good ole fashioned "Las Vegas Style" poker -- last time I was in Vegas I found absolutely nowhere that this could be played.

I doubt you will find this game anywhere in Vegas these days. What is the point in a casino spreading a game hardly anyone plays any more, when they can spread Hold'em at the same table and fill that table up right away? Odds are even if you do find it, it will be played by some enthusiastic locals who have probably played it for years and are probably quite good at it. With that in mind, your EV is going to be lower. So why not become good at one of the popular games such as Hold'em and Omaha and take money from all the fish that frequent these games in Vegas.
Poker Stars spreads a very soft 5 card draw game. Check it out. Lots of bad players there.
